Indian Night arrives at the Palms Resort's PauPau Bar

Palms Resort Saipan is beefing up its theme nights at Paupau Bar & Terrace by introducing Indian cuisine every Thursday.

Food and beverage manager Cristina Lustre said Indian Night started this week and will be a staple to Palms Resort's weekly theme nights.

Aside from Indian Night, Paupau Bar & Terrace treats its guests to Shabu-Shabu Night on Mondays and Tuesdays, Mexican Night every Wednesday, Seafood Night on Fridays, and Chinese Night every Saturday.

For Indian Night, Lustre said Palms Resort will be serving authentic Indian food prepared by no less than executive sous chef Habib Akbar, who has been cooking up the island's best South Asian fare since 1987.

Last night, Akbar and his staff prepared traditional Indian dishes like chicken tandori, lamb and beef curry, Indian rice, lentil beans, and grilled spicy beef and chicken.

To wash it all down, Akbar gave guests a choice of iced tea, sodas, and Indian Night specialty Mazala Indian Tea. For dessert, sweet tooth's got a sampling of rice pudding, banana bread, and carrot curry, which interestingly, like the world-famous curry, originate from India.

The executive sous chef said the menu of Indian Night would be different next week and every week after that.

Akbar, who hails from Lahore, Pakistan, said Indian food is unique because of its heavy reliance on vegetables and a variety of spices and herbs, which makes the cuisine one of the healthiest in the world.

He added that Indian cuisine has become quite popular on Saipan the past few years. Akbar said aside from tourists, locals have also developed a liking to dishes from South Asia and he feels confident that Indian Night will be great addition to Palms Resort's expanding offerings.

Lustre, for her part, is confident that Indian Night, along with its other theme nights, will help Palms Resort capture the evening dine-out market.

Indian Night costs $25 for adult diners and $12.50 for children. It is from 6pm to 9pm at the Paupau Bar & Terrace, which comfortably sits 150 guests.
