Siberia welcomes new executive chef

Siberia Restaurant executive chef Boris Shugal is revamping the Russian restaurant’s menu by introducing fusion cuisine. (Mark Rabago) Siberia Restaurant welcomed a new executive chef last month and Boris Shugal is already promising to introduce fusion cuisine at the Russian restaurant.

The 55-year-old Shugal is a graduate of the French Culinary Institute (now the International Culinary Center) in New York. He has over 30 years of experience and has worked in the U.S. mainland, Aruba, Canada, Germany, and Italy.

By his own admission, Shugal said Siberia Restaurant’s menu is “too Russian” and he wants to shake things up a bit.

To this end, Shugal will be introducing a more diverse lineup by incorporating other cuisines—French, Asian, and continental ways of cooking and preparing food.

Shugal, a native of St. Petersburg, said that loyal patrons of Siberia Restaurant should expect more steak and pasta dishes in the future as well as a more westernized beef stroganoff. He said he wants the restaurant to offer traditional Russian dishes with a western and American twist.

Shugal said he cooked his first meal when he was 6 when he and his playmates became hungry after playing outside. To his recollection, his first dish was an omelet “with everything on it.” At over 6 feet tall, he also plans to go back one of these days to playing pickup basketball. He also dabbles a bit in ping-pong and badminton.

Siberia Restaurant operations manager Kayoko “Kay” Irinaka said the establishment is also available for private parties and private chef bookings. She said prospective clients only need to call in advance to reserve the date and the services.

Emerald City LLC opened Siberia Restaurant in the middle of the year. It is located on the second floor of the ABC Building across DFS Galleria, along Beach Road.

Siberia Restaurant comfortably seats up to 50 guests and is open from 10am to 11pm daily. For reservations and for more information, call 233-7733.
