(Frauleine Villlanueva-Dizon)<\/figcaption><\/figure>\n<p>Veal is not something that you would usually see on Saipan\u2019s menus much so veal that is cooked in its auntentico Italiano glory.<\/p>\n<p>Lucky for us, Hyatt Regency Saipan is joining once again the celebration of the annual International Day of Italian Cuisines and not only did Giovanni\u2019s serve up this year\u2019s chosen dish during the world-wide celebration yesterday, it will continue on until the end of the month.<\/p>\n<p>For its ninth year, Costoletta alla Milanese was served up by members of the Virtual Group of Italian Chefs all over the world, which includes Hyatt\u2019s executive chef Gabriele Colombo\u2014the only chef on island that is part of the organization.<\/p>\n<p>\u201cEvery year we come up with this idea to feature authentic Italian dishes,\u201d Colombo said.<\/p>\n<p>Colombo, who is from Milan, said that the featured dish is something that could be found in homes as comfort food and as a traditional recipe.<\/p>\n<p>Costoletta alla Milanese is a breaded and golden pan-fried veal cutlet. As simple as it may sound, the delicate flavor and texture of the meat cooked in the authentic Italian way is not something that could be taken for granted.<\/p>\n<p>The white veal meat is about 10 ounces, pounded to about two inches thick and cooked with clarified butter, eggs, and fresh breadcrumbs. The result is a sumptuous dish made even more perfect when drizzled with freshly squeezed lemon.<\/p>\n<p>The dish serves four people, depending on whether it is served as an antipasto or a main course.<\/p>\n<p>According to Colombo, clarified butter gives the meat the buttery-like softness and flavor.<\/p>\n<p>The veal, not typically found on island, is especially ordered by Hyatt for this event for the CNMI to enjoy.<\/p>\n<p>Costoletta alla Milanese is perfect when paired with medium to bold flavored wines\u2014Italian vinos are preferred, of course.<\/p>\n<p>Share in the celebration and enjoy this special Italian dish priced at $35 per person.
