Other customers were also drawn to the inviting aroma emanating from Night Scent Restaurant’s kitchen, which is actually one of the reasons they put the word “scent” in the restaurant’s name, according to Lin.

Night Scent Restaurant’s chicken wrap. Lin said their fried chicken has been the toast of the town since they offered it in their take-away menu. She said, bar none, Night Scent Restaurant’s version of fried chicken is the crispiest, juiciest, and tastiest piece of chicken on island.

Like the colonel’s recipe, how her husband’s family’s fried chicken is made is proprietary information. She also shared that rumors that they copied the fried chicken of a certain Filipino fast-food chain known for its happy bee are unfounded.

“Our fried chicken recipe has been in my husband’s family for generations. My daughter tried Jollibee and of course has eaten our fried chicken.
