{"id":56575,"date":"2001-03-09T00:00:00","date_gmt":"2001-03-09T00:00:00","guid":{"rendered":"http:\/\/96d53f04-1dfb-11e4-aedf-250bc8c9958e"},"modified":"2001-03-09T00:00:00","modified_gmt":"2001-03-09T00:00:00","slug":"96d53f15-1dfb-11e4-aedf-250bc8c9958e","status":"publish","type":"post","link":"https:\/\/www.saipantribune.com\/index.php\/96d53f15-1dfb-11e4-aedf-250bc8c9958e\/","title":{"rendered":"Cooking with Chef Singh"},"content":{"rendered":"<p>Steamed Onaga with Miso Cream Sauce<\/p>\n<p>Make 4 Portions:<\/p>\n<p>\u2022 16  ounces  Onaga fillet<\/p>\n<p>\u2022 12  pc  scallops<\/p>\n<p>\u2022 2  dried  konbu<\/p>\n<p>\u2022 2  ounce  sake<\/p>\n<p>\u2022 4  Tbs   Baby Onions, finely chopped<\/p>\n<p>\u2022 4 Tbs   unsalted butter<\/p>\n<p>\u2022 12  ounces  whipping cream<\/p>\n<p>\u2022 1  ounce  miso<\/p>\n<p>\u2022 6  tsp   lemon juice<\/p>\n<p>\u2022 1  tsp   tobiko<\/p>\n<p>\u2022 1 pc  grilled lemon wedge<\/p>\n<p>\u2022 white pepper &#038; salt to taste<\/p>\n<p>Steamed vegetables: Asparagus, sweet Pease, baby zucchini, baby carrots, yellow squash.<\/p>\n<p>Method: Place konbu in a pan with Onaga, sprinkle salt and sake. Wrap with saran wrap and steam for 12 to 15 minutes. Grill scallops separately.<\/p>\n<p>Saut\u00e9 round onion in butter until heated. Slowly stir in whipping cream, white pepper lemon juice and miso . Put the steamed Vegetables in middle of serving plate, Place steamed Onaga on perper vegetables.Pour miso cream sauce around the fish.
