{"id":83608,"date":"2004-08-28T01:25:00","date_gmt":"2004-08-28T01:25:00","guid":{"rendered":"http:\/\/a07265fc-1dfb-11e4-aedf-250bc8c9958e"},"modified":"2004-08-28T01:25:00","modified_gmt":"2004-08-28T01:25:00","slug":"a072660d-1dfb-11e4-aedf-250bc8c9958e","status":"publish","type":"post","link":"https:\/\/www.saipantribune.com\/index.php\/a072660d-1dfb-11e4-aedf-250bc8c9958e\/","title":{"rendered":"Cooking with Chef Singh"},"content":{"rendered":"<p>Local Pumpkin Cheesecake<\/p>\n<p>Recipe for 8 servings<\/p>\n<p>1-1\/2 cups gingersnap crumbs or Graham crackers<br \/>\n1\/2 cup finely chopped pecans or your choice of nuts<br \/>\n1\/3 cup butter, melted<br \/>\n24 ounces cream cheese, softened<br \/>\n1 cup and 2 tablespoon sugar white sugar<br \/>\n1-1\/2 teaspoons vanilla extract<br \/>\n4 large eggs<br \/>\n1-1\/2 cups pumpkin pur\u00e9e (freshly cooked)<br \/>\n1 teaspoon cinnamon powder<br \/>\n1\/2 teaspoon ground nutmeg <\/p>\n<p>Methods: Preheat oven to 350\u00b0F. Combine gingersnap crumbs or Graham crackers, pecans and butter. Press onto bottom and 1-1\/2 inches up sides of a 9-inch spring form pan. Bake for 10 minutes in 350\u00b0F oven. Remove and let cool. <\/p>\n<p>Combine cream cheese, 2\/3 cup sugar and vanilla, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, beating well after each addition. Remove 1cup batter from mixture and chill for 8 hours. Add remaining sugar, pumpkin and spices to remaining batter; mix well. <\/p>\n<p>Alternately layer pumpkin and cream cheese batter over the crust. Cut through layers of batter with a knife several times to achieve marble effect.<br \/>\nBake at 350\u00b0F for 1 hour and 15 minutes. Loosen cake from rim of pan; cool before removing rim of pan.
