The food preparation process
At Issue: The Saturday night food poisoning that sent over 60 guests, including the bride to CHC.
Our View: Hotels must rule-out outside menu for any and all nuptial celebration at the venue.
We meant well whenever we hold nuptial celebrations at hotels due to lack of space at private residences. Often, too, we pitch-in dishes (local delicacies) to supplement the menu given by hotels to ensure that the nuptial event is the best ever for the newly weds and guests.
The recent food poisoning from two nuptial celebrations ought to send a clear message to families and hotel management that neither side can chance such practice given the dangers of food poisoning. While hotel chefs exercise extra care in the preparation of a set of menu for nuptial or other parties, we can’t say the same of dishes from without that are brought in by the family.
The preparation of delicacies that are made a part of the final menu is a delicate process on such food as crab kelaguen, oysters, sashimi, giant clam kelaguen and other dishes.
The decomposition rate is quite fast if they are not chilled properly before and after the preparation process. Locals too are a bit stubborn on this issue. Thus, when combined with the take-it-for-granted attitude, little do we know that we are chancing food poisoning that would turn a festive event into a deadly digestive affair.
Either the hotels turn down any and all non-menu dishes on an outright basis or face the risk of inviting food poisoning once more as it happened last weekend. It should asks families to bring in the raw food and special recipe so they prepare it themselves, or politely rule-out any and all food from kitchen venues from without that definitely do not observe public health standards. Either that or link-up with catering services from without to ensure that certain health standards are observed to the hilt.
Yes, many of our gatherings revolve around food. It equally means that we also must observe certain standards in the preparation of food for parties in open family dirty kitchen. Never forget for a moment that certain levels of toxin from crabs and seafood can also be dangerously unhealthy. Let’s strike greater understanding of the process of food preparation that eventually find their way into the plates of guests, friends and relatives. Si Yuus Maase`!
