Samson Tan successfully defended his title as barbecue champion at the 7th Annual Taste of the Marianas International Food Festival and Beer Garden on Saturday night.

Tan, who shared the first-place plum with two other participants at last year’s barbecue competition, said he came back more prepared for this year’s contest. He said he gave his Filipino-style barbecue recipe a lot of thought and practice making it worth the while for the judges.

He also improved the presentation of his entry, giving it an island touch by decorating it with flowers and shaping the rice into small latte stones.

Tan received $100 and gift certificates for besting four other contestants. Runners-up Gonzalo Pangelinan and J.D. Tenorio got $75 and $50 cash, respectively.

Judges at the competition were World Resort Saipan general manager B.K. Park and chefs from the three other hotels participating in the food festival—Pacific Islands Club, Hyatt Regency Saipan, and Dai Ichi Hotel Saipan Beach.
