Indian Style B.B.Q. Chicken

Tandoori Chicken

Ingredients (Make one whole chicken)

250 grams yogurt-natural

15 grams chili powder

10 grams cumon powder

10 grams coriander powder

10 grams curry powder

5 grams cinnamon powder

2 grams fenugreek leaves

50 ml oil- mustard or vegetable

10 grams garlic (paste)

10 grams ginger (paste)

2 gm food color -orange red

2 gm. food color -lemon yellow

10 gm. salt (to taste)

20 ml. vinegar malt

Preparing Tandoori marinade

Combine all the ingredients in the mixing bowl except the vinegar and whisk to a smooth paste. Add salt to taste.

Preparing the Chicken

Remove the skin, clean and cut the chicken into parts.

Rub salt and vinegar to the chicken and set aside from 15 to 20 minutes.

Marinate chicken overnight in the Tandoori marinade.

Cooking:

Preheat the oven at 350 F for 30 minutes

Place the chicken on a rack in the oven for 25 minutes at 350 F. Check the chicken if already cooked.

Note: This recipe can be used for island-style B.B.Q. but cook chicken at low temperature. Serve with yogurt, cucumber and mint sauce.
