Well-traveled executive chef comes aboard PIC
Darren Ferrall brings with him 25 years of culinary experience as the new executive chef of Pacific Islands Club.
Originally from Hobart, Tasmania, Ferrall has worked in the United Kingdom, the Middle East, and all around his native Australia.
He said he accepted the executive chef position at PIC Saipan for an opportunity to gain more experience, especially in a region where preparing food for Japanese, Korean, and Russian tourists is a top priority.
“At PIC we will look to improve on what we have in place, I will be using my experiences from Australia, the UK, and the Middle East to influence the food that we serve at PIC,” said Ferrall.
“Australia is a very multi-cultural country and Australian food has a great blend of Mediterranean flavors, Asian flavors, and European so a lot of the food is innovative.”
Asked what his goals are this early in the job, the 40-year-old Tasmanian who now makes Adelaide, South Australia, his home said making guests happy is No. 1.
“One hundred percent guest satisfaction is always a challenge, fresh produce (meat items) and at this stage cheap fuel,” he joked.
PIC F&B Director Steve Balakrishna said Ferrall appears to be the right man for the job as he has a wealth of experience that could benefit the San Antonio resort’s food and beverage department.
“He been to many places and a wide range of culinary experience and is a very people person. He also has the capacity to show his expertise. I am very sure that with his knowledge, he will bring PIC to another level and we are happy to have him onboard. I welcome him. Very importantly, he loves what he does and connects well with whom he comes in contact with,” he said.
Ferral and his family of four—he brought with him to the Pacific his wife Kellie and their two daughters names, Ally and Chelsie—have only been on Saipan for a week, but he says so far so good about his move to Micronesia.
“To early to totally comment, but we have experienced a very warm welcome from all of those that I have come in contact with so far, the weather is great,” he said.
