North’s Best Burger a big hit

The North’s Best Burger of Mariana Resort and Spa’s 12th Night Restaurant has been selling like hotcakes lately.

Executive chef William Retardo said they currently average 20-30 orders a day and his kitchen works overtime to accommodate the demand for the burger, which is the creation of 2013 Taste of Marianas Chef Competition winner Emmanuel Pancha.

North’s Best Burger is made from Certified Angus Beef, honey molasses glazed bacon, caramelized onion, grilled lettuce, roasted tomato with sea salt, sautéed mushroom, and smoky tomato mayo.

Retardo said their guests love the burger’s savory, sweet, and smoky taste.

North’s Best Burger is only $12, inclusive of your choice of beverage and a side order of French fries.

The 45-year-old Pancha, who has worked as a cook at the Marianas Resort for 18 years and was also the winner of the inaugural Top Chef Competition a year ago, said he and his fellow chef, Richard Miemban, concocted the recipe in a span of a few days and involved three sample burgers.

The earthy—because of the plentiful mushrooms—North’s Best Burger was the hand’s down favorite of their sampling team, which included Retardo, and it was the entry they submitted to the 2013 Taste of Marianas Chef Competition.

The North’s Best Burger is available at 12th Night Restaurant of Mariana Resort. For reservations, call 322-0770.

  1. For a real burger connoisseur, one doesn’t need honey molasses glazed bacon, caramelized onion, grilled lettuce, roasted tomato with sea salt, sautéed mushroom, and smoky tomato mayo. All of these things distract from the beef flavor. Not a good idea. Let the beef shine, not the toppings.
