Despite typhoon, Java Bakery reopens

After Typhoon Dolphin’s gusty winds and rains on Friday night, a warm Saturday morning was waiting for Saipan residents as Java Bakery reopened in Paradise Hotel on Middle Road.

One would think that after a storm, everyone would just stay home but surprisingly, a lot has been up and about very early. The bakery opened at 7am and did a simple ribbon cutting around 8am. Around that time, more than 50 people have already dropped by.

“Very busy, but very good. Seems to have a lot of happy customers and this is my first day offering lunches and so far it’s been a pretty enthusiastic reception, so I’m very happy about it,” owner Sarah Fryling said.

“In spite of the power going out three times while I was trying to get ready this morning, it still turned out pretty well,” she added.

According to Fryling, she wasn’t much intimidated by the cyclone because she was banking on the forecasts that said it will be gone by Sunday morning.

Instead of thinking there won’t be much customers, she viewed it as a perfect opportunity.

“I figured people probably aren’t going to have power, they’re going to be bored, there’s nothing much to do today, everything’s closed. It’s a perfect opportunity for me to give them something to do, somewhere to go,” Fryling said

Adding to her luck, Paradise Hotel was fully occupied the night before because of the typhoon. Some of them went for breakfast at her bakery.

Aside from adults who woke up early, or maybe weren’t able to sleep at all, children also enjoyed their breakfast while playing in the kid’s corner.

And despite coming from a chilly and scary night, the atmosphere in the shop was fun and light—which may be because of the warm drinks and comforting food.

“I’ve had a lot of hot chocolate orders. That’s kind of an unusual order, not too many people get that but it seems to be appealing today,” she said.
