Northern Chinese cuisine at the Chairman M

Saipan gourmands, prepare for a new flavor in town.
The newest restaurant on island, Chairman M, which features mostly the lush and bold cuisine of northern China, has opened inside the Imperial Pacific Resort in Garapan.
According to Lucy Guo, assistant vice president for food and beverage of Imperial Pacific International, Ltd., the restaurant is named after Mao Tse Tung, the founding father of the People’s Republic of China.
“Chairman M serves northern China cuisine but we added a twist to make it different and memorable. Northern Chinese cuisine is known for its strong flavors, achieved by seasonings and herbs. Because it is cold in the northern part of China, the dishes are richer in meat and has garlic and scallions, ” she said.
The typical way of cooking northern Chinese dishes is by stewing, roasting, stir frying, or deep frying—the same cooking styles that can be expected of dishes at Chairman M.
“People can expect big flavors in big servings here in the restaurant because northern Chinese dishes are generally served in big portions,” according to the restaurant’s executive chef, Chen Hai Song.
Northern Chinese dishes are also known for their healthy and healing benefits because the ingredients used are nutritious, Guo said.
What makes Chairman M different is that it will be a double-feature restaurant, offering the Northern Chinese menu from 11am to 11pm daily and the Noodle Bar menu from 11pm to 11am. That means it will be open 24 hours a day.
Chef Tong Xin will be presiding over the sumptuous feast of traditional and authentic Northern Chinese cuisine. From the capital city of Beijing, Xin has 29 years of experience in authentic Northern Chinese cuisine and has worked at the award-winning “Made in China” restaurant of the five-star Grand Hyatt Beijing, which is known for its signature Peking duck. With Xin on board, Chairman M will introduce a new dimension to its Peking duck here on Saipan.
Meanwhile, the Noodle Bar menu will be prepared by executive chef Haisong Chen, who has 29 years of cooking experience. He has worked at the Golden Flower Restaurant at the Wynn Palace Cotai Resort in Macau, which is a 2-Michelin-star restaurant, and at the Imperial Treasure in Marina Bay Sands, Singapore.
According to Guo, their dishes cater to both VIP and medium-range market. “We have in mind the local market. In fact, the restaurant offers a 10-percent discount to residents. We also have dishes that cater to VIP guests.”
The VIP specialties as well as chef Chen recommendations include Wagyu beef with special sauce, goose liver, and roasted duck, to name a few.
For drinks, Woodbridge red and white wines are available, as well as luxury French red wines. For beer lovers, enjoy their ice-cold draft Stella Artois. They also have luxury whiskeys such as Macallan M and Macallan No. 6 and popular Chinese liquor Moutai 50 Years, to name a few.
For tea lovers, Chairman M has an array of over 40 types of tea that have been selected to compliment Northern Chinese cuisine.
The restaurant’s name is supposed to invoke luxury and this is evident in the opulent interior design, furniture, utensils and table presentation at Chairman M.
The restaurant can accommodate 92 people and it has four VIP rooms with big screens for entertainment or for presentations.
