Mustafa Issa, general manager of Hyatt Regency Saipan, welcomes Saulo Bacchilega as the chef de cuisine at Giovanni’s Italian Restaurant.

Saulo began his career in the culinary industry about 17 years ago, having been trained in Instituto Professionale Alberghiero Di Stato in Italy. He landed his first chef position with Ristorante La Brasserie in Italy and continued his career with various restaurants and hotels in Italy and Switzerland and the United States.

He joined Hyatt Dallas Forth Worth in 1998 as sous chef where he was responsible for Il Nonno’s Italian Restaurant and Mr. G’s, a fine dining restaurant.

With his new position as chef the cuisine at Giovanni’s, he plans to create new and exciting menus using the freshest ingredients.
His specialties are fish and fresh pasta, experimenting and exploring with new ideas while keeping the authenticity. He wants to provide all guests a comfortable atmosphere where they can relax and have a great time.

As for food, you will just have to come and try it for yourself. He will even give you the recipe if you ask.

“We are very excited to have Saulo as part of the team. You will see new items on the menu soon that reflect his creativity and the wealth of his experience,” says Mr. Issa. “Who can do a better job with Italian cuisine than an Italian chef?”
