“We have to strictly comply with U.S. standards. Everything we do has to meet certain standards. We have to comply with different guidelines—temperature control, handling control, hazard plan,” said Eli E. Maravilla, Carmen Safeway Supermarket general manager. “You cannot go around the guidelines and standards. You have to follow them.”

Having a U.S.D.A.-approved meat-cutting facility involves a lot of work, said Maravilla, “but we want to give our customers the best, that’s why we go the extra mile.”

Maravilla said a U.S.D.A. inspector visits the facility everyday to monitor activities. “We cannot process anything without the inspector,” he said.

Carmen Safeway Supermarket has a wide range of choice meat products, among them U.S.-certified Angus beef, as well as meat and lamb cuts from Australia.

Aside from a U.S.D.A.-approved in-store meat-cutting facility, Carmen Safeway Supermarket also has its own bakeshop where bakery products are done everyday to ensure freshness.
